Pizza Perfect

One of my favorite foods is pizza. As best I can, I want to stick to my New Years resolution of giving up white foods such as flour, rice, and processed sugar, while not giving up my passion for pizza! Well here came the challenge. I found a recipe online for Flourless Pizza. I thought, this could not possibly taste good, but I was ready for the challenge.

I made a few modifications and came up with a recipe for pizza that will blow your mind, but not your waist line! This is a low fat version of pizza (depending on your added toppings). It is cheesy, crispy, satisfying, and tastes GREAT!

I even tested out my new found pizza recipe on my husband, who is a pizza fanatic as well, and he could not tell the difference. After I told him it was flourless pizza, he kept eating and enjoying it.

Ingredients
Crust Ingredients
• 4 ounces cream cheese, softened (1/3 reduced fat or fat free works fine)
• ½ cup egg beaters
• ¼ cup Parmesan cheese
• ¼ teaspoon granulated garlic
• ½ teaspoon dried Italian seasoning
• 16 ounces (2 cups) mozzarella cheese, shredded
Topping Ingredients
• ⅓ cup (favorite brand) tomato sauce
• 8 ounces (1 cup) mozzarella cheese, shredded
• Variety of favorite toppings: pepperoni, ham, sausage, cooked ground beef, fresh veggies, etc.
Directions
• Preheat oven to 375 degrees. Lightly spray 9 x 13 glass baking dish (metal does not work well; crust will stick) and line with parchment paper.
• For crust, in medium bowl, whisk cream cheese until smooth and creamy. Whisk in eggs until mixture is well-blended and smooth. Add the Parmesan cheese and seasonings. Stir in mozzarella until completely moistened. Spread mixture evenly over parchment paper.
• Bake for 20- 25 minutes, until evenly golden browned. Let cool on a wire rack for a few minutes. Allow crust to completely cool in the refrigerator for several hours uncovered. (For a quick cool, place crust in freezer for 30 minutes.) The goal is for the crust to dry out enough so that it will be crispy/chewy and you can pick up with your hands.
• Once cooled, remove parchment paper and place crust back in same pan. Spread crust with pizza sauce, layer on toppings of your choice and cheese.
• Bake at 375 degrees for 15 – 20 minutes or until cheese is melted and bubbly. Let stand a few minutes before cutting. Makes about 8 servings.
