Today Show Tailgate

I recently had the pleasure of being a guest chef on NBC’s Today Show. I brought the party to the Plaza! I  represented hard for my home NFL team, the Atlanta Falcons aka “Dem Dirty Birds”. I created two dishes to make my team and home fans proud.  I prepared my famous “Dirty Bird” Stuffed Burger. That’s a turkey burger stuffed with bacon and cheese. And just to keep all things Georgia, I added sweet grilled peaches on top. Yum Yum! We ran out of time before I could also mention my Sweet Vidalia Onion Dip. You know it’s not officially game day without  bacon and a hot cheesy dip served on the side. Enjoy the recipes below!

Bacon Stuffed Turkey Burger or “Dirty Bird” Burger

Serves 6 people

Prep time: 10-15 minutes
Cook time: 20-25 minutes


2 pounds ground turkey

1 teaspoon salt

½ teaspoon pepper

½ teaspoon garlic powder

1 tablespoon Worcestershire sauce

6-8 strips thick cut bacon, cooked, and crumbled

4 oz. Pepper Jack cheese, shredded

2 large peaches, sliced into ¼ inch rounds

1 tablespoon olive oil

Pinch of salt

½ cup mayonnaise

Several dashes of favorite hot sauce

½ teaspoon garlic powder

1 cup arugula

6 brioche hamburger buns



  1. In a small bowl, mix crumbled bacon and cheese.
  2. In a large bowl, mix ground turkey, salt, pepper, garlic powder, and Worcestershire sauce together.
  3. Portion your individual burgers using a ½ cup measuring cup, leveling each scoop.
  4. Using your fingers, form a well or slight hole in the middle of burger. Fill burger with a couple tablespoons of bacon and cheese. Form the sides over the filling, completely covering filling with turkey meat. Gently press to form a round burger.
  5. Heat non-stick sauté pan or grill over medium high heat. Cook burgers for 6-8 minutes per side, until burger is cooked throughout to 165 degrees F and cheese is melted on the inside.
  6. In small bowl toss sliced peaches with olive oil. Season with a pinch of salt. Place on grill for 2-3 minutes each side.
  7. In small bowl whisk mayo, hot sauce, and garlic powder. Season with salt and pepper to taste.
  8. To assemble burger: Spread spicy mayo on bottom bun. Top with arugula and turkey burger. Place slices of peaches on top and cover with mayo cover bun.


Sweet Vidalia Onion Dip

Serves 10-12 people

Prep time: 10 minutes
Cook time: 20 minutes


1 tablespoon of unsalted butter, softened


1 large Vidalia onion, peeled and chopped

4 cloves garlic, minced

1/4 cup chopped chives

8 oz. cream cheese, softened

½ cup mayonnaise

1/2 cup sharp cheddar cheese, shredded

½ cup Parmesan cheese, shredded

½ cup mozzarella cheese, shredded

½ teaspoon salt

¼ teaspoon ground black pepper


1 baguette of bread, sliced into ¼ inch pieces

2-3 tablespoons of Olive oil




  1. Heat oven or grill to 375 degrees.
  2. Prepare casserole dish by buttering all sides and bottom.
  3. In a large bowl, mix all remaining ingredients together. Spoon into prepared dish. Bake for 15-20 minutes until cheese is bubbly and golden brown.
  4. While dip is baking, toss bread slices with olive oil. Season with salt and pepper to taste. Place on grill or toast in the oven on each side for 1-2 minutes.
  5. Serve dip piping hot. Top with any remaining chopped chives and arrange the bread on the side.
