Goat Cheese Stuffed Mushrooms

Makes 12-14 mushrooms


8-10 ounces white button mushrooms, washed, stems removed

2 cloves garlic, minced

4 ounces goat cheese, at room temperature

2 tablespoons parsley, chopped

¼ cup Italian bread crumbs

1 tablespoon Parmesan cheese, finely grated

½ teaspoon salt

¼ teaspoon pepper

2 tablespoons olive oil

Cooking spray



Preheat oven to 400 degrees. Spray foil lined baking sheet with cooking spray.

In a bowl mix together garlic, goat cheese, parsley, bread crumbs, Parmesan cheese, salt, pepper, and olive oil using a fork.

Use a spoon to fill mushrooms. Place on baking sheet and bake for 15-20 minutes until tops are golden brown and mushrooms are tender.
