Maple Syrup Sweet Potato Fries

Serves 6-8 people


  • 2 tablespoons olive oil
  • 4-6 small sweet potatoes (about 1 pound), peeled and cut into wedges
  • 2-3 tablespoons olive oil
  • Salt and pepper
  • 2 tablespoon maple syrup
  • 2 green onions, diced


Heat oven to high broil.

Place the sweet potato wedges in a large bowl (reserve bowl for later use); toss wedges in the olive oil and salt and pepper to taste.

Place the potatoes wedges on foil lined baking sheet. Broil until tender and charred slightly, approximately 16-18 minutes.

In reserved bowl from before, mix maple syrup and green onions.
Add the wedges to coat each one with syrup and onions.
