Roasted Cedar Plank Salmon

Serves 6-8 people

  • Cedar wood plank
  • 1 whole salmon filet, skin off
  • Olive oil
  • Salt and Pepper
  • ¼ cup Dijon mustard
  • 2-3 tablespoons dried dill
  • 3 tablespoons brown sugar

Preheat oven to 400 degrees. Place plank in oven for 5-10 minutes. Remove from oven and place on a sheet pan. Brush generously with olive oil.

Prepare salmon filet by seasoning both sides with salt and pepper. Spoon on Dijon mustard and sprinkle with dill and brown sugar.

Rest salmon on plank and roast for 15-20 minutes or until cooked and flaky throughout. Adjust oven setting to high broil, and cook salmon for additional 5 minutes until top is golden brown.
