Zucchini Succotash

Serves 4 people


  • 2 tablespoons olive oil
  • 1 pound (about 2) medium zucchini, diced
  • 1 cup frozen corn kernels
  • 1 red bell pepper, diced
  • ½ cup diced onion
  • 1 cup frozen lima beans
  • ¼ cup chopped parsley
  • Salt and pepper, to taste


In a large skillet, heat oil over high heat. Add zucchini, corn, bell pepper, and onion. Sauté for 5-6 minutes. Stir in lima beans. Cook, tossing, until corn and beans are tender and beginning to brown, about 5 minutes. Remove from heat. Stir in parsley; season with salt and pepper.
